How to trim, season and cook the core protiens: Brisket, Pork Ribs, Bacon Burnt Ends, Pork Butt's, Smoked Pork Belly. Plus Snags and maybe lamb on the final platter with Cornbread, Mac and all the trimmings. It's a mean feed.

Comparing low and slow vs hot and fast Brisket is always an eye opener.

With three waves of food including Smoked Burgs (or maybe Sausage rolls) to start, finishing with a huge share platter of our classic sides and meats.

We provide 4x Beers per person so no driving.

The class is during our big cook of the week where 2000kg of meat is on the pits for Saturdays big service, so the theatre is at a Max.
